Banoffee Crumpets

Dessert doesn't get any better than this.    

And bananas are good for you!    

Preparation: 5 minutes Serves: 4
Cooking: 5 minutes Unbuttered
Ingredients Quantity (metric) Quantity (imperial)
Bananas 3 3
Caramel sauce 4 tbsp 4 tbsp
Vanilla ice cream 4 scoops 4 scoops
Caramel sauce
Light soft brown sugar 175 g 6 oz
Double cream 300 g 10.5 oz
Unsalted butter 50 g 1.75 oz
Salt 1/2 tsp 1/2 tsp

METHOD

    The quick version

    1. Buy a jar of caramel sauce and warm it gently in a pan.
    2. Add some chopped banana, and gently fry in the sauce for 2 minutes.        
    3. Place it on the crumpets, add a scoop of ice cream on each, pour over the remaining caramel sauce from the pan, and add any other toppings.

    Making caramel sauce

    1. Gently heat the sugar in a non-stick pan until it starts to liquify and then starts to turn a golden colour. Don't stir, is the word on the caramel sauce cooking street.
    2. Stir in the butter, double cream and salt, and cook on a medium heat until the sauce is golden and syrupy.

OTHER NOTES

Coconut ice cream also works well. Or banana. Or even rum and raisin!

And why not top with some chopped hazelnuts. Seriously, pimp away!
